From My Kitchen: Baked Chicken In Orange And Parsley

On days when I’m juggling chores within a short span of time, something good turns up from the oven.  With some basic ingredients and 30 minutes to spare, here is a dish I managed to whip up in a jiffy and prepare on the spot:

BAKED CHICKEN IN ORANGE AND PARSLEY

1 pc boneless chickenn breast

1/2 fresh orange

1 large garlic clove, minced

dried parsley

sea salt

freshly cracked pepper

extra virgin olive oil

1.  Squeeze fresh orange juice over the chicken.

2  Rub with minced garlic and dried parsley.

3.  Sprinkle with sea salt and pepper.

4.  Drizzle with olive oil.

5.  Place in a baking dish and pop it in the oven for 30 minutes.

  1. Looks delicious! Chicken with orange is delicious. Another great topping is taking fresh orange juice, and heating it in a sauce pan with dried cranberries. Strain the berries out and pour over the chicken. So good!

    • Awesome. Am doing that for my next experiment then :) It’s amazing what you can whip up using odds and ends. Can’t wait to find dried cranberries so I can try this. Thanks for this idea!
