There are days that, due to my procrastination, I am left with an empty stomach and a very bare cupboard.
But wait a minute. I see a bit of a lifesaver.
Behind the bottles, I found a can of Spam by its lonesome, courtesy of my husband’s grocery adventures. In the fridge I unearthed almost wilted scallions, two eggs and a tub of cottage cheese both about to hit the expiration date.
And this is where a little creativity kicks in: making something out of (almost) nothing
HONEYED SPAM
Slice Spam thinly. Heat pan with sunflower oil and cook the Spam. Drizzle some thin streams of honey over it. Flip occasionally to so that both sides get glazed evenly. I cook mine until it gets almost toasted. Remove from pan and put on a plate.
SCRAMBLED EGGS WITH COTTAGE CHEESE AND SCALLIONS
Throw together two eggs (that was all I had left anyway), a huge dollop of cottage cheese and sliced scallions. Dump them all in a hot pan with sunflower oil. Sprinkle with freshly ground pepper, wait until cooked and serve with Spam.
And there you have a plate of stylized fast food.
