I’ve sat at the bar at Mozza a couple of times already but this is the first time I’ve noticed the vintage gadget on the counter.
Finally! A quick but apparently old-fashioned way to decipher recipes when they say “Use 1 LARGE egg”.
I have always wondered about the basis of egg size in a recipe — now I know that there is a some sort of legit system for it.
Shucks, I wouldn’t mind having my own vintage scale

What happens with an ostrich egg?
How about the airport scales? :p Do they really cook ostrich eggs?!? And if ever, for what? An omelette??
Never seen one before – beautiful thing!
My first time too — I was pretty fascinated with the thing, actually
Yes, I need one of those too!
Finally, it will solve the mystery of what a small, medium and large egg really is!
that is so cool! i didnt know theres such thing
Neither did I
that is awesome!
I heard the chef also has a collection of antique egg beaters, too!
that would be so cool to see! Love the history of those things.
